Rich biscotti stuffed with chocolate, coconut, and almonds and drizzled with more of the same! A double dose of delicious.....perfect for holiday gifting and dunking!
There is, quite possibly, nothing I love more in the morning than a steaming cup of coffee on my lips. It feels like such a treat....such a reason to get out of bed....aside from my three kiddos, of course. I take mine fresh ground and strong, with a little cream and sugar, and while I would prefer sharing a cup with someone else, that doesn't stop me from enjoying it on my own most mornings.
My interest in coffee started young, when it seemed that the only thing to do with friends on any given night was go for coffee. We would hit up Denny's or Dave's or a little place called Coco's....sometimes just me and a friend, sometimes as part of a big group. And we'd order our coffee with endless refills and maybe a bagel or hashbrowns, and we'd sit there. All night. Great customers, I know.
And then came college, when I worked in not one, but two different coffee shops and learned how to make everything from lattes to steamers to blended drinks that tasted like ice cream. And how to appreciate the difference between different types of beans and blends and roasts. And I drank a lot of coffee. I guess what I'm saying is we go way back - coffee and me. Which is why I'm so happy I'm finally at a point in my pregnancy when I actually have a taste for it again! Because, for me, that's the first thing to go.
Now that it's back, I feel like I appreciate it a little more. It feels like a little bit more of a treat than it did 2 months ago....and even more so when I drink it with this biscotti. I'm telling you - if you love coffee, there is no better way to enjoy it! And even if you don't, you'll still love this stuff! It's sweet and crunchy and so reminiscent of Almond Joys....a treat for your morning, with or without a steaming cup of coffee to go with it.
Almond Joy Biscotti
3 eggs
3/4 c. sugar
3/4 c. oil
1 tsp. baking powder
2 1/2 c. flour
1/4 tsp. salt
1 1/2 tsp. almond extract
1/2 c. chopped almonds, plus more for sprinkling
1 c. shredded coconut, plus more for sprinkling
1 c. chocolate chips
1. Beat eggs and sugar until light yellow.
2. Add oil. Add baking powder, flour, salt, and almond extract. Blend well.
3. Stir in chopped almonds, coconut, and 1/2 c. chocolate chips.
4. With floured hands, shape dough into 2 long loaves, about 3 inches wide and 1 inch high.
5. Place the loaves on a greased cookie sheet. Bake at 350 degrees 45 minutes.
6. Remove from oven; cut into 3/4 inch slices and return to oven to toast for 10 minutes.
7. Let biscotti cool; then stand up and drizzle tops with remaining 1/2 c. chocolate chips (melted), additional chopped nuts, and shredded coconut to taste.
